Although it’s hard to believe already two months have passed since Christmas, the end of February can mean only one thing – it’s time for PANCAKES!!
Yes, that’s right all, pancake day falls next week on 28th February and below are some great recipes to brighten up your Tuesday evening…

Once your batter is made you can mix things up with all sorts of different fillings (both sweet and savoury)…
Our favourite savoury fillings:
• Egg, ham and cheese – a traditionally French crepe filling, this one tastes great with a few mushrooms added too.
• Squash, goat’s cheese and rosemary – a little more like a fritter than a pancake, these wintery flavours are the perfect comfort food for a chilly evening.
• Spinach, blue cheese and walnuts – Roquefort or something creamy is best used here and a little ham is a great addition for those wanting something a little more filling.
• Camembert and apple – made with Calvados, these ones are a deliciously naughty treat.
• Smoked salmon with crème fraiche and a drizzle of lemon juice – no explanation needed, just wonderful…
Still hungry? These are great for those with a sweet tooth:
• Lemon and sugar – simple but delicious and they take just minute to make too!
• Crepe Suzette – a classic French recipe using orange juice and Grand Marnier which is just delicious!
• Nutella – Chocolate, hazelnuts and pancakes. There’s something about this combo which is pretty much unbeatable!
• Chocolate, peanut butter and banana – check out BBC Good Food’s recipe for these as they sound just fantastic…
• Blueberries, greek honey and yoghurt – have this one for breakfast or dessert as tasty, healthier option.
